Hapipadi shows us how to cook Ginisang Munggo (Sauteed Mung Beans), one of his favorite Filipino dishes. When you cook, you have to be joyful. Think of how God has blessed you with the many gifts that made cooking possible. While cooking, think about how God is allowing you to use these gifts, and rejoice with joyful expectation of how the food will be shared as a gift to others, to nourish them and make them feel loved, as God loves them. When you cook joyfully, the food will taste better.

GINISANG MUNGGO

Ingredients:
2 cups mung beans
1/2 pound pork tenderloins, squared
4 pieces eggplants, sliced
a small bundle of spinach
3 pieces tomatoes, sliced
2 tbsps, chopped garlic
1 piece chopped yellow onions
water
fish sauce (or salt, if desired)
vegetable oil

DIRECTIONS: Boil the mung beans continuously until the beans are soft and almost pasty; add more water for boiling as necessary. On a separate pan, boil the pork to a sizzle, allowing its own lard to cook it. Add some vegetable oil as necessary. Add in the garlic and brown it with the meat. Add the chopped onions and saute together. Flavor with 3 teaspoons of fish sauce. Add the sliced tomatoes. (You may also throw in the tomatoes only later on in the cooking, together with the eggplant.)

Add the boiled mung beans into the pan of sauteed pork, garlic, onion and tomatoes and stir well. You may transfer the entire mixture to a deeper pot and bring to a boil. Add the sliced eggplants and bring to a boil again. (Add more water if the soup gets too thick.) Taste the soup and season more as needed. When ready to serve, top the mung beans with spinach and leave for a minute. Turn off the heat, and stir before serving.

Pair this dish with fried fish, or any other fish dish like Fish Paksiw.

Mahirap pala mag-isip kapag nagluluto, nagsasalit at kumukuha ng video at the same time. :)

pasensiya na po kung hindi siya enough para matututunan ang dish.
