@rekkhabusy Someone probably already replied to this comment, but EVOO is used because it's simply more flavorful. The better/more expensive the ingredients, the better your sauce will be.

You cook the sauce on LOW to MEDIUM heat so the EVOO doesn't burn. Did you see any smoke there? No.
