@ 1:40 "you do not want to use metal. (bowls, instruments, tools, etc)" . . . then you proceed to measure out your flour with a metal measuring cup, lol. Won't hurt it, just thought it was funny :) thank you for the video.

I'm an artisan sourdough baker and a pastry chef and I use metal utensils with my sourdough all the time. I've never had ANY problems whatsoever. I keep my sourdough in a ceramic bowl in the fridge (when I'm not using it).
Also, it's best to weigh out your ingredients. Most bakers use a 1:1:1 (by weight... one part sourdough:one part water:one part flour).

I have also heard that it is safe to use stainless steel, but only stainless steel.

By the way, you're funny - made the video interesting! :)

Neat video - I might get some of their starter. Did you know that sourdough tastes different depending on where in the world it's made? That's because wild yeast organisms vary all over the world and it's those organisms that bring the flavor to the starter.
By the way, you should always sprinkle flour into your measuring cup with another cup or a spoon, not scoop it directly into your measuring cup. By scooping like that, you're compacting the flour, measuring out too much.

Once you have the four parts, is it at this point that you put one of those 1/4ths back in the fridge to keep the starter going?
-
Sourdough has yeast in it ... it's just wild yeast
If you need to cut out yeast .. eat unleavened bread, biscuits, or breads like banana/zucchini bread

Thks for the video posted.I would like to know what else does these sourdought can be at? other than making bread?I need some informations pertaining to growing bacteria, yeast etc....into something that can be use in my organic gardening project.

Thanks for the great info. My hubby's been diagnosed with gout, so I need to cut yeast out of our diets. I've baked breads before, but never sour dough, so this should be a great adventure!

You shouldn't use actual silverware (made of silver). It's a actually pretty good antimicrobial agent. It will kill your starter or impair it! I believe stainless steel utensils are safe to use.
Storing it in glass or transparent plastic is good since you can see how much bubbling is occurring inside vs on the surface.
Hi summerchilde, thanks for sharing this so valuable information about starting the starter. I have written down all your procedure - I will be using it in my pizza and winebar I plan to open in Merida, Yucatan, Mexico this coming autumn. Thanks a lot again,

You are so cute!! :) Fwiw = Hooch in bread making is actually uncarbonated beer. Grain alchohal would be distilled from grain, this is fermenting bi-products. save it, bottle it, carbonate it... :)

Thanks for noting the difference between grain and fermented alcohol.
