Ingredients:
4 cups diced (1/4 inch pared apples, any kind)
1 cup coarsely broken pecans
2 cups sugar
3 cups flour
2 tsps baking soda
1/4 tsp salt
1/4 tsp all spice
1/4 tsp nutmeg
3/4 tsp cinnamon
1 cup butter or margarine, melted
2 tsps vanilla
2 large eggs slightly beaten

  • Do you have to refrigerate the apple/sugar/pecan mixture for an hour? or can it be at room temperature?

  • I just made some! I split the the recipe in half and made one half with regular sugar and one half with granulated Splenda :) I made 12 square -shaped mini cakes with each portion in the oven, 325 degrees for 20 min.

    They turned out so yummy! the Splenda batter just doesnt get too "soupy" so i added a little bit of water to it (1/2 cup). I also made a glaze with powdered sugar nd milk and vanilla and drizzled it on top. DELiSH! Thanks Brookes mom!!
