I call them muffins because if you make them for a bunch of people, you can prepare them in a muffin or cupcake pan. Today, however, I prepare them in ramekins because iI just made two.

Preheat oven to 400 degrees.

Spray your muffin tine or ramekin with Pam.

Lay your ham out to cover the bottom of the tin/ramekin. Add your egg in (I have even scrambled it prior to putting it in the cup), and whatever additions you want to add (onion, green pepper, mushrooms, cheese). Add salt and pepper if you choose.

Bake for 12-15 minutes. 12 minutes will give you a yolk that is still a little 'wet' and 15 minutes will cook it through to a hard boiled stage.

This is really nice when you do have a household full of people. You can prepare them and put them into the oven while you get hashbrowns prepared on the stove. I've made these for years now. Enjoy!

  • Brilliant! love the recipe! Now I m sending a Hitman to your house LOL! I am going to try a bit of Finely grated Potato to the top with the onion and a sprinkle of Grated Parmesan instead of melted Cheese..

  • @COOLIKEDATAZIAN They could be fairly healthy if you left out the yolk and cheese ;) But yeah, they give you a lot of taste for not that big a pay off in terms of calories. Just the egg (with yolk), ham and onion would be around 125 calories. About 180 with the equivalent of half a slice of cheese. So not too bad
