THE BASE GRAVY (GHARABI)

Ingredients:-

750 grams chopped onions,
1 chopped carrot,
½ a red pepper (capsicum),
1 t-spoon garlic powder
½ t-spoon ginger powder
½ t-spoon salt,
100 ml sunflower oil
1 tablespoon chopped fresh coriander,
1 t-spoon fenugreek leaves,
1 t-spoon coriander powder,
1 t-spoon cumin powder,
1 t-spoon turmeric powder,
1 and ½ t-spoons Garam Masala,
1 tablespoon of tomato paste or tomato puree,
200 grams (half a can) tinned tomatoes,
1 and ½ litres of water,
Method
Put all in a large pan and boil gently for 1 hour, then blend smooth in a blender. Add more water when you blend, if you have to.
The blended gravy should be quite runny (like a thin soup), when you make the curry and boil on high heat this will reduce the gravy to the consistency you want, this also intensifies the flavours, You will have plenty left for freezing in 300 ml amounts.

  • You mentioned fresh coriander twice, but the first time you mentioned it, it didn't look like coriander. So what is it? I'm planning on making this at weekend, so if you could get back to me before then it'd be great. Thanks.

  • Excellent - I 've tried countless recipes but this one really is like an Indian restaurant stlye madras. Had my doubts about a few things (carrots?) but went with it - spot on!!

  • (At 5:48)..if you chop everything up finer..ie :- dice..you should only need to simmer for around 20 mins until the contents are soft enough to blend.
