Looks great, even if slightly tame (for my taste anyway). If you're ever inclined to experiment, I highly recommend Trinidad Scorpion peppers as a substitute for some of those Scotch Bonnets. They're certainly appropriate, and would kick this up a few notches. A rather exotic pepper to be sure, but if you can't find any, give me a jingle and I'll send some pods your way.

The "ugly cucumber" is bitter melon...known as caraille in Trinidad.
Shandon Beni or Shado Beni is known as "culantro" in the states. They sometimes have live plants in Publix supermarkets. We have purchased culantro by the case at asian markets. You can use cilantro, but the flavor of Shado Beni is so much more pronounced...and better.
