hmm,
well i started off playing by ear to cd's when i was 14 so i guess that is why i didn't see your point of view.
...plus its a little easier when you have a video of the guy doing it as well.
but to each his own.

Maybe his/her ears haven't become attuned enough to do that yet, maybe they are just starting out, and need some guidance before they can pick things up by ear. Eventually someone will be able to pick stuff like that up, but you have to start somewhere
