Next we will look at the static oven, available both in gas or electric versions. The electric model has both top and bottom heating elements. This oven can also be used as a salamander by opening the door and only selecting the top heating elements. Our static ovens have no fans, as they are designed to allow for even heat distribution through natural convection. The oven door has a special raised rim that fits snuggly against a similar profile on the oven body to retain heat and to eliminate the need for fabric gaskets. The oven base has an enameled surface and has raised ridges to allow for placing large trays or pans, while reducing the surface contact between the tray and the base, to help prevent burning. The oven rack is 2/1 gastronorm.
