For the recipe given according the video, the butter should be approx 165g Butter, 40g Light corn syrup and 180g of sugar. (I don't like too sweet anyway :p ) You can always adjust the sweetness by your preference =)

how would you go about ganaching a mousse cake with a mirror glaze. im always afraid it will melt the mousse

@ando1135 : The best way is the freeze the cake first for at least 1-2 hours, then you prepare your glaze. After it's ready, straight away pour onto the cake and the flow will coat on the cake very well.
