東海大學食品科學所-蔡正宗 酵素博士研究證實,經過發酵熟成的諾麗果汁,產生的份子較小,人體容易吸收,另外發酵時間長短也很重要,太短或過久,其中特殊成份會無法轉化成功或是會降低特殊功效。發酵­期間的長短,對於抗氧化成份與清除自由基的作用,有一定的變化,所以發酵期很重要,最佳發酵期與生技萃取的方法,對於NONI產品功效有正面的幫助,諾麗果經過發酵後,如­果採用加熱濃縮或高溫滅菌等方法,易破壞某些怕熱營養成份,如果採用低溫或急速冷凍濃縮乾燥法,最能保留住諾麗果的特殊成份。
