I don't care who does the interview - I could listen to John Palmer's advice anytime. His "How to Brew" book is one of my favorites

I brewed an extract beer about 4 or 5 months ago and it used to have great head and lacing and now it has almost none. What he is saying about yeast is very true I guess, only thing is, the beer tastes better than ever now!

So again, as in the first and second video, Palmer is advocating the use of LME to create a good beer with head and lacing. However he is giving insight into when and how to use it. As usual TSA 90% crap to get 10% of good info.

Actually reading Palmer's "How to Brew" book instead of just looking at the pictures would be helpful.

I heard John Palmer say loud and clear @4:39 "that's why the extract late method is useful". His book is full of his own recipes advocating the use of LME with late additions at knockout.
On page 33 of "How to Brew" he says" Homebrewers will often complain that they can't make good beer with extract, but it's just a matter of freshness. The bottom line is to use fresh extract..."
Hmmm.....
