【材料】:中筋麵粉2杯、海鰻1斤、絞肉4兩、韭菜2兩、薑1塊、油1大匙、鹽1小匙、胡椒粉1/3小匙、香油1大匙、酒半小匙
【做法】:
1、韭菜切末,備用。
2、薑切片,放入一碗水中,靜置片刻,然後在水裡擠壓成薑水。
3、鰻魚用刀割刮取魚肉剁細,加入絞肉繼續剁細,調入鹽、胡椒粉、米酒、麻油拌勻。
4、邊攪拌邊加入薑水,接著放入韭菜拌勻,加入沙拉油、鹽直至餡料變潤滑。
5、麵粉2杯加入八分到1杯水量,揉成麵糰,醒30分鐘。
6、墊上一塊墊子,灑上乾麵粉;
7、把醒好的麵糰,分割成小粒,用手掌壓成扁圓狀,再用麵棍做成餃子皮備用。
8、將餡料包入餃子皮中,入滾水中點3次水,即可盛出,完成「海鰻水餃」。
