No. The X Rules (additions to the 9th Edition rules) changed the language around establishing a pivot such that a Greatest was legal. Since then, and through the 10th and 11th editions of the rules, The Greatest is a legal ultimate maneuver.

Its hard to tell because of the video quality. But the grass length wouldn't matter. If the disc touches a single blade of grass, its a turn.
