Ricetta: Filetti di sogliola 500 gr- Arance 2- limone 1- Uovo 1- Pangrattato 100 gr- Olio extra vergine di oliva. Impanare e friggere i filetti di sogliola. Emulsionare i succhi di frutta con l'olio e ridurli a fuoco molto basso. Tratto da Uno mattina le ricette dello chef Antonello Riva.
