@mrspanno1 A ganache ( The real classic one) is same weight of cream for chocolate.
Boil the cream and melt the chocolate.. when the cream boils, remove from heat and add it to the cream...
Flavored Ganace.. just infuse your cream before pouring it on the chocolate.

@mrspanno1 Well, it was for culinary school, so it's a huge amount, but I think he did something like 1 qt. cream, 3 oz. honey, and 3 1/4 lb. semisweet chocolate.
