Greetings! So last night before I went to sleep, around midnight, I checked my dough and it had already risen to the top of the bowl. I left it there worried that I was making a huge mistake. Well, at 5:15 this morning when the dogs needed to go out, I checked the dough and wouldn't you know it, it had risen right over the sides of the bowl!

Well, I suppose it was time to shape it for the second rise. The dough is the boss here! I shaped it and let it rise for about 2.5 hours and then took it out of the oven so I could preheat.

I set the oven temp at about 400 degrees and then threw a big handful of ice cubes in the bottom of the oven to simulate a steam environment for the bread to get a nice crust.

I put in the bread and let it bake for 25 minutes. It came out perfect!

I allowed it to cool for as long as I could before cutting into it for breakfast. That was about 15 minutes. This bread is amazing! I am so, very happy at how successful we have been with this little sourdough journey. I hope that yours is just as wonderful and that you reap the benefits of collecting your own wild yeast and making your own bread without any commercial yeast at all! I think this is such an important thing for us to know how to do.


We will be making more bread this afternoon with the beer starter so stay tuned for another video showing those results along with a taste comparison.

  • Okay, I messed up somewhere, the only thing I did different was my starter, I used potatoe water. My starter was bubbly and smelled sour, but no rise on bread, do I need to use a fruit juice to make my starter? Please respond, I think we need to be able to make bread without yeast, for shtf or just no yeast! thanks Noreen for all your videos, am learnig still for alternate ways for food preps and preparing the food for eating.
