In this University of Wisconsin-Madison program, leading experts from Donna Shalalaa, former secretary for the department of health and human services, to Barry Carpenter, president of the National Meat Association, executive director of the National Meat Association, look at U.S. National School Lunch Program as a case study to weigh in on food safety within the food supply chain. Learn about how science, technology and policy impact food safety from the beginning to end of the food supply chain. This program's objectives are to educate the viewer about the organisms that make us sick, how these organisms get into our food supply chain and what we can do to protect ourselves from food borne illnesses.

  • excellent worker!

  • yes u are right, it puts in danger the quality, the result of the product and also the health of people.

  • This video is a good example for teaching people why cleaning is important, but the practices are important too. I don´t understand why in the video, the operators don´t cover their face during the process, in front of the food. I learnt in GPM that spit contain a lot of bacteria that can cause damage and contamination to the food. They appear here with their face uncover and even talking. Is that a good practice?
