Atkins Diet Recipes: Low Carb Pecan Pie Cheesecake (E-IF)

In partnership with FaveDiets (http://www.favediets.com/Cheesecake ) recipe site, I have been working on a pecan pie substitute for awhile. Most low carb recipes feature isomalt for the corn syrup substitute, and I didn't have access to any. I still wanted the flavor, but I wanted more flavor as well. I thought what better than combining it with the richness of a cheesecake. That is how this recipe came about. Happy Easter!

Ingredients:
Crust:
1 cup almond flour
1/3 cup butter, melted
1/4 cup vanilla whey powder
1/4 cup flax meal
2 tbsp Splenda

Filling:
12 oz cream cheese, softened
1 egg
1/2 cup Splenda
1/2 cup sour cream
2 tbsp butter
1 tsp vanilla extract

Topping:
3 eggs
1 cup sugar-free maple syrup
1 cup chopped pecans
3/4 cup Splenda
1 tsp vanilla extract
1/4 tsp salt
1/4 cup butter, melted

Makes 12 servings
Nutrition Information per Serving:
358 Calories, 34.6g Fat, 9.8g Protein, 5.1g Total Carbs (2.5g Fiber = 2.6g net carbs)

Is the maple syrup like pancake syrup? Or is it like the vanilla/caramel ones I find in the coffee aisle? I don't think I've ever seen maple! Thanks! :)

@bazingo99 Yes, this is sugar free maple syrup like pancake syrup. Check out my low carb haul video or waffle recipe that I have posted for a couple of sample brands of extremely low carb sugar free syrup. DaVinci's, Vermont, or Walden Farms are all good brands.

@MegaSweetChristine I hope you like it. Pecan pie cheesecake is one of those divine pies that I can't make too much of. It's that good.

@MegaSweetChristine I buy mine from the local grocery store by the other syrup aisle, but you do have to be careful about which ones you purchase. There are some SF syrups that are extremely high in sugar alcohols, often the nasty ones. Netrition online also sells them for a reasonably good deal too. Check out my recent low carb haul video for the one I purchased recently.

I cant ever find sugar free syrup...where do you buy it? Do I have to go into a specialty shop?
