Tomato Pesto Pasta Salad is a sensational fresh salad, perfect for parties, barbecues or an easy weekend dinner or lunch. Pasta is cooked and combined with store-bought pesto sauce, then anointed with fresh juicy chicken, tomatoes, parmesan cheese and chopped parsley. Very impressive, but very simple, this salad will become an instant family favourite - Give it a go!

RECIPE FACT SHEET

INGREDIENTS IN THIS DISH:

500g Penne Pasta (cooked as per packet directions)
1 Jar of Tomato Pesto Sauce (about 200g)
200g of Cooked Chicken Breast Fillet, cubed (I used Poached Chicken)
Cherry Tomatoes (quartered)
Freshly Grated Parmasen Cheese
Freshly Chopped Parsley

Preparation Time: 10 minutes
Cooking Time: About 10 -15 minutes

SERVES 4 - 8


ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

  • From what I gather this is the same as basil pesto but with dried tomatoes instead of the basil. Never heard of it till today but being that I dry romano tomatoes that I grow I will be making it in the food processor like I do the basil pesto.Hope it freezes as well as the basil kind. I also home can my veggies and bake my own bread but you have to have the time for stuff like that. I'm spoiled lol.

  • Your pesto there is simply tomato sauce or what else is there? Just so you know, we Italians call pesto a sauce made with basil, parmesan and pecorino cheese and olive oil ;) You got me confused for a moment. Nice recipe though :)

  • @brungasto LMAO -- yeah, Oz fridges come in sizes a lot smaller than anything I've ever seen in Canada/North America homes (they still got the big 'normal' ones we're used to, but a lot of homes have those small ones). I'm taller than my fridge, and I'm 5'2.5.

  • @brungasto It's a camera illusion - the tripod is higher than me and the camera is angled down. So it makes me look taller than everything ;)

  • @OnePotChefShow Try 2 pantries and a set of cupboards in the basement. Two freezers and 2 fridges. I quick can all my soups and stews too, that's what the second fridge is for. It's nice to have the space for every size crock pot too. All I ever wanted was a huge kitchen. Took 30 yrs to get it but wow it's great. :o)
