Regarding your new pool, instead of the traditional sloping bottom, why not make it a Watsu pool, which would be a uniform depth of about 4 feet. Of course it has to slope just enough to be able to drain it. You could have some awesome Watsu parties!

Was that the Werbeck singing method? I loved that. Also, I'm glad to see that you changed your strategy from building more homes and then selling the place and moving on to develop the next plot. I think it makes more sense to do what you're doing; making your place as awesome as possible, and stay and enjoy it. If you want to build homes to sell, you can always buy an empty lot nearby for that purpose. Sounds like you've created community by getting like-minded folks to buy land nearby, yes?

There are greywater systems that use underground catch basins and pumps to help with irrigation. You might even be able to create a faucet near the herb gardens using this method.
