pork skin is better when eaten soft like in a braise or stew than when its made crackling out of. fucken thing melts in the mouth like pudding

I ate this two weeks ago, and I can assure you it was delicious. The fat was absolutely wonderful; after braising for 3 hours 30 it was unctuous but not sickly or cloying.
