what type of riding do you like to do, what terrain do you like and how strong of a rider are you? everyone will give you a different answer but to find the best board for you you need to give some personal info.

I am a intermediate rider. Mostly I ride on groomers...

I would suggest the regular custom especially if you are an intermediate. The custom X is a stiffer more aggressive board. If you want something you can butter and spin easier I would say the Custom by far.

I just found a super sweet deal on a 2008 Burton Seven board. It's a 157 and I"m 6'2" 156lbs. The board, however, is pretty narrow and I have size 12 boots. Do you think any of this is going to be an issue? I wanted something nice and short so I could play around on it and have fun in the park and in the woods. I'm in VT so most of my riding is done on icy conditions, not powder. Do you know anything about the seven?

thats a pretty stiff board for a park board and the waist might be an issue with your size gun boats.
