    Nice, but if you use a Turkey Oven bag you can get it tight around the turkey and use a more concentrated brine. (Same recipe above but no added water and less salt.) Also will actually fit in your fridge, i'd still use a large bowl in-case it springs a leak. Never hurts to mix in apple or pear wood with your hickory :D I love seeing the Always brand stuff being used! Same stuff in my kitchen!

    Nice. I like taking a whole stick of real butter, melting it in a bowl and adding enough cheese cloth to cover the entire top/side surfaces of the bird. It seems to help, esp when done at a lower temp

    (190-200) @45min/lb.

    I rub mine w/Lysander's poultry rub if I don't have the Cookshack stuff.
