  • Awesome brine. Some my 12 lbs looks and taste great.

  • Nice. I like taking a whole stick of real butter, melting it in a bowl and adding enough cheese cloth to cover the entire top/side surfaces of the bird. It seems to help, esp when done at a lower temp

    (190-200) @45min/lb.

    I rub mine w/Lysander's poultry rub if I don't have the Cookshack stuff.
