@lilabarrett Dough of any kind is kneaded to work up gluten, which makes the baked product chewy. Biscuit dough is kneaded very slightly to form a tender biscuit with a crumb that is more flaky than chewy.

Thank you so very much for this quick-tip! I'm making biscuits for the first time, and have never kneaded before! I was warned not to overknead, but I didn't know how much was too much....
