Y'know, it's a family thing. How you learn it is the right way if it works for you. I was taught to do egg in wok, but your way sounds easier. -.-;

Uh, no. That's just another method of making fried rice. The only aim of that procedure is to make the rice turn yellow/golden-ish.

I still need to get the protective covering off my wok then season but I will experiment doing it that way. For now, doing it on the stove I add the eggs after frying the rice a bit. Comes out nice and fluffy.

Lettuce = tough ingredient. So delicious cold and crisp, and so easy to make mushy and flavorless with over cooking.
Am I the only person who still makes fried rice by tossing the rice and raw egg and THEN wok-frying? I was taught to do it that way....
