1) In recovery mode, I don't see a "back up and restore" option.
You probably didn't remove the battery at the right time. Remove the battery as soon as your phone vibrates. If your phone reboots without removing your battery at the right time, the stock recovery will be re-installed (which doesn't have the back up and restore option) and we don't want that to happen. If that happens, you'd have to install CWM again.
2) Can't mount SD card
-try flashing cwm again
-save everything from your sd card into a different disk and format your sd card. then try again.
-try a different sd card
