Doesn't matter for this application, in fact a lower smoke point may be better as the oil will smoke and polymerize before the temperature is so high that there might be a risk in warping/damaging the pan.

Well with De Buyer pans you need to season, Stainless steel mineral b.
I asume it's the same process as this but they don't season it as much
