Meh, not really, the bamboo is cleaned. Also the noodles aren't reused once they reach the bottom, and the water is fresh. I suppose the small amount of saliva on the tip of the chopsticks might be transfered to the noodles near where you grab them, but either way you would recieve more germs from breathing by far.
