The penguin represents Tyler; it is a symbol for the usual uniform Durden wears masquerading as a peon in the service industry. Usually what he wore were tuxedos, hence 'penguin suits'.

@coveruplies well, I'm not sure why his power animal was a penguin, maybe because they live in on ice (=his frozen, joyless life) and they move slowly (= his life wasn't going anywhere), but I suppose the 'Slide' thing means go on, live. In this version of 'Slide' Marla became his "power animal", because this is about the time when he "meets" Tyler, so I suppose you could say her way of life (he saw her as free and he liked it) got him to want to change something and become Tyler.
