you don't have to jailbreak it anymore, the new update for ipod touch gives applacations that you can get from itunes.

Man you have to jailbreak it. I had the same worries as you but I just thought, "If something goes wrong you just reboot it." *How to Reboot*
1. Hold Home and Sleep/Wake button at the same time
2.After 10 seconds, let go of Sleep/Wake button, keep holding home button.
3. Restore iPod/iPhone. *NOTE*
Make sure your iPod/iPhone is connected to iTunes for the entire process.

the pocket guitar didnt work on my iphone either but i found this other app. that is almost like it u just go to installer...... install....toys....GUITARIST....then install. if u wanna know how to put guitar hero 3 on a i touch/phone or pianist just comment me my channel name is denisserangel....
