They are gutted so that they keep better. Left out of water they start to "blow"

You can keep them in sea water (they are then sometimes called swimmers) but the water has to be checked regularly, dead worms removed, water changed......

thats really effective! quite gory when they pop tho. like a big spot lol. i'm also surprised they are still alive when popped or "gutted". i'd have thought they'd be DEAD.
