想要成就一道佳肴,除了需要优质的食材原料之外,烹调技术的完善才能变化出无穷的美食妙味。国宴级浙菜名厨阿金师强调,厨技与做人原则息息相关,要能坚持,不行就是不行,­否则味道就不妙了。

道地丰富的江浙菜肴,讲究真材实料。为了弘扬中华厨技文化,阿金师今天特别露一手给观众瞧一瞧。首先准备材料:青蟹2只、葱花2大匙、蒜末1大匙

接下来是真功夫:这个您得看仔细了1.青蟹洗净去肺叶,切成四块,沾上面粉2.锅中放油加热到180℃放入青蟹炸至金黄捞起3.爆香葱花、蒜末,放入青蟹后以豆瓣酱、酱油­、糖调味,淋米酒后以小火焖煮4.成品倒翻.盛盘

饭店主厨李阿金:"过去有一句话说,会学做菜之前先学会做人就是这样子,人格特质先出来,学功夫才会入门,心浮气燥没办法做好。"
