Yields: 8 servings
Ingredients:
1 medium green bell pepper
1 medium red pepper bell pepper
¼ cup sliced almonds, toasted
4 oz. reduced fat cream cheese, softened
1 tsp. no-salt seasoning blend
1 tsp. lemon juice
Preparation Directions:
~ Cut each pepper in half lengthwise; discard the stem, seeds, and membrane. Cut each half into 6 pieces. Arrange the pieces on a serving tray.
~ Set aside about 1 tbsp. of almonds for garnish. Process the remaining almonds in a food processor until finely ground. Add cream cheese, seasoning and lemon juice and process until creamy.
~ Spoon mixture into a piping bag fitted with a wide mouth tip or a resealable plastic bag with the corner snipped off. Pipe about 1 tsp. of the mixture onto each bell pepper. Garnish with sliced almonds.
