I think people do that because they don't want you to know just how important you are to them. They want to keep that information at bay. They want you to believe that what you are saying is not so important or they also might want to make it look as if they are not hanging on to your every word (but they are!) So they respond with HUH first...even though they know exactly what you are talking about and they know exactly how to answer.

I realised why people do that, while what the persons saying hasnt processed fully in their brains, their reactions are too quick so say HUH? Then their brains send a signal down to let them know what you said, so they then interupt because their brain has annoying quick reactions yet slow process
