I made some homemade pickled okra. Added habanero peppers for a fire flavor... Here's the recipe:

GARLIC OKRA PICKLES

3 lbs. fresh whole okra pods, 3 to 4 in.
3 c. water
1 c. white vinegar
1/4 c. pickling salt
2 c.cloves garlic, minced
2 or 3 Chile peppers

Thoroughly wash the fresh okra; drain well. Pack the okra pods into hot clean pint jars, leaving 1/2 inch head space.

In a sauce pan combine the water, white vinegar, pickling salt and minced garlic. Bring the mixture to boiling. Pour the hot liquid over the okra pods in the jars, leaving 1/2 inch head space.

Prepare jar lids according to the manufacturers directions. Wipe jar rims, adjust lids. Process in a boiling water bath for 5 minutes. (Start timing when the water returns to boiling.) 4 pints

  • Your suppose to use a pressure cooker. Boiling will give you enought heat to kill good bacteria that would aid in pickling, but it wont kill botulism inducing bacteria, ecoli, or salmonella. If really want to pickle dont heat the jars at all. The salt brine is all you need but the good bacteria will produce a different taste. otherwise you REALLY REALLY need to be using a pressure cooker. The food looks great by the way.

  • @kstewintheart4u I boil the brime first and submege the bottles for about 10 minutes... They are still good to this day.. Thanks for asking.

  • If the solution was vineger (3parts) and water (1part) then the acid in the vinegar will prevent any wrong thing from happening. We took to pressure canning this year - such a time consuming task. The reward is great tho. If done right vegetables are already cooked when you get them out of the jar down the road. They also last almost forever. I just ate some apple butter that was over 11 years old. Tasted great & no trips to the doctor.

  • @jrwinn32 also, my family has used the water bath method dating back forever.. its completely fine to do it the way you showed in your video.. i like the dab of hot sauce you put on the okra before boiling the jars.. i'm gonna try that next time..
