Banana Foster French Toast
Serves 4


8 slices of Texas toast
2 cups milk
6 eggs
1 Tbsp of granulated sugar
1 tsp vanilla extract
1/4tsp cinnamon
1 oz butter
8 slices of bacon cooked & reserved
4 oz fresh whipped cream
8 oz banana foster syrup**
4 sprigs of mint
4 tsp of powdered sugar

1) Mix eggs, milk, sugar, vanilla, cinnamon & nutmeg until fully incorporated.
2) Dip slices of Texas toast into custard
3) In a hot sauté pan melt butter & cook French toast on both sides until golden brown.
4) Arrange French toast in the center of the plate.
5) Ladle 2 oz of banana foster syrup over French toast.
6) Pipe 1oz of whipped cream between slices of French toast, laying 2 slices of bacon next to whipped cream.
8) Top with mint leaf & powdered sugar.

**Banana Foster Syrup
8 oz of butter
4 oz brown sugar
2 oz banana liquor
1oz rum
2 bananas sliced

1) In a sauce pot melt brown sugar & butter over a low flame, stirring occasionally.
2) Add rum & banana liquor (use caution as it may flame up).
3) Cook until butter & sugar are fully incorporated & sugar is dissolved.
4) Remove from heat & add banana slices.
