I recently got an s-video adapter for most of my consoles and I was surprised at just how much the quality had improved over the composite cables I was using. I recorded two videos here using the same capture device, same resolution, same color and brightness levels, and same compression settings. The only differences between the two videos are the cable used to capture them and the logo in the bottom-right. I know I'll be recording in S-Video now whenever possible.
The quality difference is most easily noticeable in the title text. You can see that S-Video completely removes the "comb" effect Composite/RCA has; if you read the technical stuff about how the two connection types work you'll understand why.
@komepelu Lucky. I have a 26" HDTV from VIZIO and it has everything but S-video. And on the box, it says "ultimate connectivity"

I have a good suggestion. Next time you capture something off a capture card use a "deinterlaceing" filter to make the black lines go away.

@figaro589 I live in the United States and every HDTV I've seen supports S-Video as well as RGB. The only thing our TV's lack, as far as I'm aware, is SCART.

@KedViper Well if you have a modern TV that doesn't have HD capabilities then I don't see much of a difference on what it looks like on the TV when it comes to S-Video and RCA. But on the Dazzle there is a big difference.

@KedViper The best you're going to get for an SNES is S-Video. Most modern TV's should have an S-Video port, it usually uses the same input channel as one of the RCA plugs.
