Take a look at my Mint 12 with Gnome 3 shell desktop. A moving background, some special effects that are hardly used in the standard Gnome 3 shell versions and the advantages of Linux Mint 12 make this a perfect work-station for me.
However, stay with the repositories and systems-packages that Mint advises. Mixing things up with software from other sources may cause damage to the functionality of Linux Mint 12.
Aside from the good-old, traditional Gnome 2 desktop (MATE), and the Gnome 'fall back mode' for computers without compositing options, my choice fell on Gnome 3 shell.
It depends largely on what YOU make of it, then Linux Mint 12 is tremendously modifiable. Assigning programs to workspaces is as easy as cleaning or cluttering up your desktop or moving some Minimize/Maximize buttons (with Gconf editor). Extensions can be set, fonts chosen, just as easy as backgrounds or Themes (Advanced Settings program).
My moving background is a real "oldie": Xwinwrap that you'll find on the Internet.
With 'Xwinwrap-read-only' from the Google software developers library you can adjust moving x-screensavers and movies alike. Just Google for it.

Yes, it comes with the GRUB and could work with Plymouth for a nice Splash....
But the Grub is there.
