    No need to boil them, steaming works, just do it longer. Also keep in mind that the less water you have, the steam will be hotter more quickly

  • Tried this method and it worked as advertised. Eggs came out soft and tasty with a bright yellow yolk and no discoloring! Great job Alton!

  • @GR1MKA1 Same here... so I turned up the heat to medium and cooked for an additional 10 minutes.. they came out pretty good after that.

  • My boyfriend and I tried this last night and it made perfect hard cooked (not boiled) eggs! They were cooked perfectly, incredibly easy to peel, and the yellows were centered. If you follow instructions word for word, you will get perfectly cooked (not boiled) eggs. Alton Brown rocks!

  • This was a total fail. Followed directions exactly and ended up with warm raw eggs. I think the "12 minutes" of cooking time was off. I think I will stick to my tried and true method of bringing to boil, remove from heat and cover for 20 minutes.

  • didn't he say the opposite? That you should use old eggs because the membrane has degraded?

  • @arjacques Okay, are you peaking at the eggs? DO NOT open the cover. Also, keep the lid closed for the whole 20 minutes. I did this and they came out pretty good. But I still like the electric kettle method better.
