Hi GialloZafferano viewers and welcome to our kitchen. I'm Sonia and today we'll be making a traditional American dessert: the New York cheesecake. Let's see what ingredients we'll be using:
• 9 oz of graham crackers or digestive biscuits-
• 7 oz of sour cream
• 1 tbsp of powdered sugar
• 1 tsp of vanilla extract
• 10 and a half tbsp of butter-
• 2 tbsp of cane sugar-
• 7 tbsp of heavy cream-
• 21 oz of cream cheese-
• 2 tbsp of cornstarch
• The juice from half a lemon
• 3 eggs-
• Half a cup of sugar-

Let's look at how we'll make our cheesecake.

We'll begin by making the base of the cheesecake. Crush the graham crackers together with the cane sugar in a food processor. Put the mix into a bowl and add the melted butter. Mix together until you get a dense mixture.

I've buttered a 10 inch springform pan. Place a piece of parchment paper cut to the same diameter into the bottom of the pan. Now, with the graham cracker mix, cover the bottom and sides of the pan.

Here's the crust. Place it in the refrigerator to set for an hour, or in the freezer for 30 minutes.

In this bowl, I'm preparing the custard mix that we'll pour into the crust. I've mixed together the cream cheese, the cornstarch, the eggs, the heavy cream and the sugar.

After adding two pinches of salt and the lemon juice to the custard, we're ready to pour it into the crust. When you've done that, you're ready to bake the cake at 350F for 30 minutes. Then lower the temperature to 320F and continue to bake for another 30 minutes.

In this bowl I've added the sour cream, the powdered sugar and the vanilla extract. Now form a layer on the top of the cake and put the cake back in the oven for another 5 minutes at 360F and then place the cake on a rack to cool.

And finally here's our beautiful slice of cheesecake. I've finished it with strawberries and caramel.

  • maybe that my imagination, but are you whipped sour cream at the end of the video??? And how you make your cheese cake so yellow, I tried 2 times and I wouldn't reach that strong yellow color. What is the secret??

  • @tavit111 Just beat the sour cream with the sugar and the vanilla, at the end. The yellow colour is due to the cooked eggs!

  • @yellowsaffron ok, but do I prepare eggs wrong trying to whip whits with sugar and then I'm adding egg yolks?

  • @tavit111 There's no need to separate egg whites from egg yolks, just combine the eggs with the sugar, the cream cheese, the corn starch and the heavy cream and blend them together

  • @magickalcat83 Cheesecake is a generic term, whereas the New York cheesecake is a specific recipe (it's taller, firm, with a sour cream topping, etc...)

  • Dumb question....what is the difference between New York Cheesecake and regular Cheesecake? Or are they the same but with different names like coriander and cilantro?
