The chicken is cut into small pieces and rub with salt and tumeric powder. Fry until just cooked and don't over fry coz that would make the chicken too dry.

Dry Thai Chilli Chicken Rendang (Rendang Ayam Kering Cili Api)
Ingredients:
1 chicken (cut into small pieaces, rub with salt and tumeric powder and fry until just cooked)
1 cup kerisek
3 pcs asam keping (alternatively can use 3 tbs vinegar or half cup of tamarind juice)
1 tbs turmeric powder
5 turmeric leaf (slice thinly)
3 kafir lime leaf (slice thinly)
300 ml coconut milk
1 tbs sugar
salt to taste
1/2 cup oil for frying
1 cup water
Spices:
6 lemon grass
2 inches galangal
2 inches ginger
10 shallots
40 pcs Thai chillies
5 cloves garlic
1 cup water
Blend all with the water to get the chilly paste
Method:
1) Heat the oil and fry the chilli paste and turmeric powder until the oil separates.
2) Add in the coconut milk, asam keping, salt, sugar and kerisek. Stir and mix well. Add in the kafir lime leaf, turmeric leaf, water and chicken. Simmer again until dry (5-10 minutes)
3) Ready to serve.
