Thank you very much for the information. I have been researching C. Albicans for a few weeks now, and it has been very difficult to wade through all of the conflicting information and differing opinions. Do you know of a good place to find reliable scientific research regarding candida infections?
I've also read about the use of prebiotics (FOS, inulin), and how they can actually damage our digestive tract (esp. inulin) and/or end up feeding pathogenic microorganisms. What are your thoughts?

Candida cannot be eliminated from the body, it is a normal part of the body. The trick is to get the immune system back in charge to keep the Candida under control. The part of the immune system that has to built up is the flora. The flora produce acids that turn off the Candida growth gene and keep the Candida in a benign yeast form rather than a pathogenic fungal form that occurs in alkaline environments. Alkalinity also turns on the Candida growth gene causing candidiasis.

To restore the flora I recommend live culture foods such as kefir, homemade sauerkraut or yogurt (not store bought), tempeh, miso, etc. You will also need to feed these bacteria once reintroduced. This is where prebiotics come in. Prebiotics are actually more important since they feed all the thousands of beneficial strains of bacteria as opposed to probiotics that only replace a very limited number of strains. Prebiotics are fibers. I prefer rice or oat bran or vegetable gums (guar, etc.).
