    We stuff ours with a mixture of breadcrumbs, Parmesan cheese, white raisin, fresh parsley and garlic,a little chicken or vegetable stock to moisten, then bake them in a red sauce. Love squid in a red sauce, the flavor is just incredible.

    We really only get the small ones here in Maine, I find them to be very tender and a great flavor. When we have been on the west coast and had theirs, they pound then to be tender. To me the flavor is not as good either. So I guess I would vote for the smaller ones. Glad you enjoyed the video.

    it is far from this easy to clean squid. where is the ink? also its a lot more slimy than it looks and a lot harder to clean the skin off and pull those back "fins" off.

    Thank you Kind Sir. I just bought some squid in Japan and they are beeeauuutiful. There are no discolorations at all anywhere on the body. I'm guessing that just shows how fresh they are.
