Duck must be an exception to the rule when it comes to poultry... That didn't look fully cooked to me.. Still pink... not sure if I could eat that after years of being told to cook poultry untill fully well done...? can any one explain this.. Thanks..

@789123Y you gotta start with a cold pan and cook it with the skin side down until it renders all the fat, then when it is crispy you can turn it over.

The skin of my duck breast became though and chewy during cooking, does anyone know why this happens?
