Salmon en Croute Microwave Recipe

Method
1. Divide the pastry in half and use one half for this recipe. Roll out the pastry thinly into a large rectangle about 11x8in and place on the prepared shelf with parchment.
2. Season the fish on both sides. Then place the fish on the pastry.
3. Add the spoonfuls of the sauce on top of the fish.
4. Brush the pastry with beaten egg and fold the pastry over the fish to make a neat parcel. Trim excess pastry and mark the pastry edges to seal.
5. Brush the top of the pastry with beaten egg to glaze.
6. Cook on Convection 200-220C for 20-25mins. Check that pastry is golden brown.

Cooking Time: 25 min
Oven Accessory: Wire shelf in lower position
Preheat the oven to 220C Dish: Metal baking sheet (31x23cm 12x9in)
Ingredients:
500g pack of Ready to Roll Puff pastry
450-500g salmon fillet or loin, skinned
6 tbsp watercress sauce or parsley sauce (ready-made or home-made)
Seasoning:
1 egg, beaten, to glaze
Flour for rolling pastry
