@mrplaytool I know this post is old. But I just wanted to add that the crab in this video is a "MD" Blue Crab. Not some asian crab that's always soft lol.

@mrplaytool nope, wrong. Koilericuz is right. it's related to the moulting of their exoskeleton, that's why the harvesting of soft shell crabs is dependent on the crabs' moulting cycles

@KolLeRiCuZ nope the shell that is normally hard that you might know of is this is actually a type of crab that is just soft, normally found in asian countries and imported.
hope you have had a chance to try it some time its actually quite a delicate dish if done well..
