Why do so many people think that a dumpling/noodle is the same thing? They aren't. A noodle is what you are making there and they are chewy after they're cooked. A dumpling is soft inside and looks just like the inside of a fluffy biscuit. I'm 56 years old and I have been making chicken and dumplings all my life and I've never used noodles. Nor did my mom or her mom or her mom before her. I guess it just depends on what part of the country you're from. I was born and raised in Virginia.

I do it the lazy way.I buy canned biscuits and just slice them up and drop them into the brothy water.It tastes good too.

Thank you Nalora for posting! My "Mammy" in West Virginia used to make these in noodle form. I made a soup like you did, but used chicken breasts. They don't produce enough flavor, I think. I added a couple more cubes of the "cheat". Bouillon cubes. That did the trick. It was pretty good. She used to use the noodles in gravy. Now I have to find a gravy video! Thanks again!

not to crazy about using the phrase 'white trash'..rather like to say 'white country cooking' or 'mountain cooking' anything than 'white trash'..its not cute anymore..watched paula dean and she only used water and flour and prefer the eggs but like the way paula dean adds cracked pepper to the rolled dough.also i like all white meat..nice video..

Good video but we call this "chicken pastry". It is very popular in NC. The local convenience store has a little diner in it, and they serve it every Wednesday. Its always at any potluck or get together.
Most people around here don't use eggs to make the pastry though, we use the chicken broth.

How long should I let dumplings sit? Last time they were tough.

Toughness has to do with the flour. Make sure the flour is very fresh. You can also add a little milk to the dough, that will help them soften more during cooking.

Also, do you simmer the chicken and add the chicken flavor after the chicken is completely cooked?

I add ther chicken flavoring while the chicken is cooking.
