LOL... Now i observed the video, you are far from Trini style pepper sauce.. You need to add garlic, shadon-beni, onions, salt, vinegar.. Now you can also add mangoes to give it a chutney flavour if you wish... But i would not eat that pepper you just made because it would send you immedately to the toilet...

Nice video. So curious how long a sauce like this would stay good for in the fridge? If I was to use this recipe and bring the mixture up to the point that its just about to boil and let it cool, I think it would last longer right? I wonder if that would taste different....well I'd only do that if it would make it last a while. If the vinegar acts as a preservative and can make this sauce last for a couple of months, the I wont worry about it :)

It will last in the fridge for a while. I think it taste better aged and I do not cook it. If you do, open a window or two. Put it in the fridge and use a plastic spoon or a wooden one. Never metal. If you don't cook the peppers you can leave it out at room temp. Enjoy it and thank you.
